Made exclusively with organically grown Italian durum wheat from Basilicata and Puglia, in the south east of Italy.  It has a nutty flavour from the bran and the germ of the wheat. The special bronze drawing process gives it a rough surface, making it perfect for absorbing sauces.  Duram wheat has a higher protein and gluten content than other types of wheat.  Grains that keep all three of parts of the original grain kernel in their original proportions after being milled into flour are called whole grains.  It contains fiber, a type of carbohydrate associated with a lower risk of heart disease; retain vitamin, mineral content better than refined grains.
