Easily digested for most people who are wheat-sensitive.   20% to 40% more protein than regular pasta.  Higher in lipids, amino acids, vitamins and minerals.

The khorasan wheat, has characteristics similar to grains of antiquity (khorasan is the name of a region of 'Iran) and is more easily digested, even by subjects with mild allergies.  It is a wheat protein more than the durum wheat and is also characterized by a good intake of micronutrients and trace elements including selenium. It has a flavor that is reminiscent of walnut. The special bronze drawing gives this pasta a rough surface, particularly suitable to absorb the seasonings.
